During inspections between October 10th and 16th, the following Lancaster County restaurants were found to violate Pennsylvania health and safety regulations.

The inspection is supervised by the Ministry of Agriculture. The department pointed out that in many cases, restaurants will correct violations before the inspector leaves.

Betty's Old Fashioned (Tower Village Store)

- The food contact surface of the cutting board is not smooth, easy to clean and/or resistant to pitting, cracking or scratching.

- The facility handink is not running.

--The three-chamber water tank is not operating during inspection.

-Food facility inspections show evidence of rodent activity in the toilet cabinet.

- Irreversible recording thermometers or thermal labels cannot be used to monitor the final rinse temperature of a mechanical dishwasher.

- Observe the raw shell eggs above the sauce stored in the walk-in cooler.

- Observe that a box of eggs is stored directly on the floor of the walk-in refrigerator instead of 6 inches from the floor as required, and a box of food is stored on the floor of the walk-in refrigerator instead of 6 inches off the ground.

- The sink in the kitchen area is blocked by plastic containers and other tableware, and employees cannot use it at any time.

- The fly glue trap installed above the food preparation area.

- The plastic concave surface of the 3-compartment sink along the wall is not fixed to the wall.

--Five 1 pound containers of raw butter from Gap View Farm were observed. This is not an approved product under the Milk Sanitation Law. The product has been removed.

- Old food scraps were observed on the tongs and the can opener blade.

-Observe that latex gloves are stored on the floor under the sink pipe, not 6 inches from the floor.

- Observe the rice cooker on the table under the dirty ventilation duct, it may be contaminated when the lid is removed from the rice cooker.

——The long ponytails of food employees have not been effectively suppressed.

- Observed one-time services and disposable items (take-out trays) stored opposite the office, directly on the floor, and not 6 inches from the floor.

Helen Point Bar and Restaurant

- Observed accumulation of grease on the floor under the frypot and on the shelf next to the frypot.

- Pre-made sandwiches, yogurt and cheese are placed in an open-air box, and the temperature is maintained at 57 degrees instead of 41 degrees (on request). Product discarded because the length of time in the hazardous area is unknown.

--The toilet room has no door that closes automatically.

- A broken door hinge was observed on the ice machine door.

--Observed hand sanitizer and spray polish are stored with the food in the cabinet.

- Scorched food scraps were observed on the tray of the stove.

Applebee's Neighborhood Grill & Bar

- Use old dry food scraps and clean utensils and pans for storage.

- The factory does not have a temperature measuring device to measure the final rinse cycle in a high-temperature dishwasher.

- There is a large amount of fat accumulation in the inside of the fryer, on the wheels and the door handle of the fryer. The fan guard in the walk-in cooler accumulates static dust. Food and other debris accumulated on the floor behind the equipment in the preparation area.

- Throughout the facility, there are damaged or missing tiles (concave) in the corners of the tableware area, corridor and kitchen area.

-Observe food boxes stored directly on the floor of the ice cream walk-in freezer, rather than 6 inches from the floor as required.

-Pre-packaged, mixed vegetables, fruits, flour and dried squid are not correctly labeled with the product name, ingredient description, and net weight, and they are distributed according to the instructions.

--Several flies were observed in the warehouse.

- This non-compliance inspection proved that the person in charge did not have sufficient knowledge of the food safety of the food facility.

- Food employees observe at the meat counter and do not wear appropriate hair restraint devices, such as nets or hats.

-Observe that the lid of the external waste container is opened when not in use.

- The food facility accepts eggs in shell that are not properly labeled and do not contain instructions for safe handling.

- The shell inventory label will not be maintained for 90 days from the date the container is emptied. Two 40-pound bags of live clams without shell labels were observed in the walk-in freezer.

- The shells located in the customer area do not have an identification label affixed to the container. Products are processed and denatured on site.

- The food facility is removing the shellfish from the original container for display at the seafood counter, but there is no record keeping procedure that associates the original label information with the date of sale.

-Dirt and dirt were observed on all cooler doors.

--Electrostatic dust was observed on the fan covers of the fruit cooler and vegetable cooler.

- A rotten smell was observed in the walk-in cooler for fish and meat. Debris and blood stains on the walk-in floor were observed. In the walk-in type, the ice used for fresh items continues to melt, resulting in stagnant water and peculiar smells.

- The residual amount of chlorine chemical disinfectant detected in the final disinfectant rinse cycle of the low-temperature disinfection dishwasher is 0 ppm instead of the required 50-100 ppm.

-The observation bin (garbage) is placed on the grass near the grease container, rather than stored in the garbage bin.

- This non-compliance inspection proved that the person in charge did not have sufficient knowledge of the food safety of the food facility.

- Observed a bowl of clean mushrooms stored in splashes of water near the sink.

- The fish was observed to thaw in the stagnant water of the three-compartment tank. This is not an approved method of thawing.

Drug and Alcohol Rehabilitation Services Company

- Splashes of old food scraps were observed at the bottom of the two small mixers. Old burnt food residues were observed on the tray of the stove.

- Old food scraps were observed on the can opener blade. Old food residues were observed in the bowl of the small mixer.

--A nozzle of the snow mud machine has black material accumulation.

- Old sticker residue on the outside of the metal pan.

- Refrigerated ready-to-eat food, time/temperature control of safe food prepared in food facilities and maintained for more than 24 hours, located in the glass sliding door cooler, without date marking.

- Several food storage containers with broken lids were observed and need to be discarded.

--Three one-gallon plastic jugs are in the sink and cannot be washed. correct.

- Irreversible recording thermometers or thermal labels cannot be used to monitor the final rinse temperature of a mechanical dishwasher.

- The hot water used for disinfection in the mechanical dishwasher does not reach 180°F. The facility will use 3 compartment sinks until the mechanical dishwasher is repaired.

- Cut tomatoes at 57 degrees instead of 41 degrees.

- Use time instead of temperature in food facilities to control ready-to-eat potentially hazardous food without the need for written procedures or documents to verify food handling.

-Raw eggs are stored on top of beverages in the refrigerator.

- The vents above the grill have accumulated grease and need to be cleaned or replaced.

-The ceiling of the facility has open and exposed beams above the food and food contact surfaces. The ceiling needs to be finished, it needs to be smooth and easy to clean.
